Maybe it's the surfing sessions, but I've been craving coconut lately, even though there are no coconut trees at Point Michaud Beach. Last week I even purchased and consumed a Bounty bar ... although, as I was eating it, I was also thinking about the tall ship HMS Bounty (and sailing to islands with coconut trees on the beaches.)

Whatever. The rhubarb is still growing in mummy's rhubarb patch, so I borrowed some more and invented this cookie recipe:
Rhubarb Coconut Cookies
1 cup brown sugar
1 cup butter (moo)
2 eggs from happy chickens
1 cup cooked rhubarb
+ brown sugar to taste
2 cups whole wheat flour
1 cup white flour
1 cup rolled oats
1/2 tsp salt
2 tsps cinnamon
1/2 cup shredded coconut
1/2 cup chocolate chips or currants
2 tsps baking soda
Cream butter and sugar. Blend in eggs. Add rhubarb. Mix thoroughly. Sift together dry ingredients. Add currants or chocolate chips and coconut. Drop on cookie sheets. Bake in 350F oven for 18 minutes.
