Cocunutted Fish












I found some fresh haddock in the fridge while home alone this weekend, and decided to cook it up rather than freeze it. I looked around to see what ingredients were on hand and did a quick internet search for a fish stew recipe that wouldn't necessitate a trip to Foodland for more. I wanted to try something Peruvian, but instead found this delicious Ecuadorian recipe: Pez Encocado.

This recipe calls for achiote or paprika; I used achiote paste, and it gave it this beautiful golden colour. I didn't thicken the broth with anything - just used the can of coconut milk, and the constistency was right. I ate it all. I would definitely make this again!
