Meatloaf

Meatloaf seems so caker, but I make one for Mummy on a regular basis to slice and have in her freezer on standby - especially handy after spending long hours out in the garden. And since today, the first day of May long weekend, is cold and rainy and not much good for anything else, I ran down to Foodland in St. Peter's for the ingredients, mixed one up, and popped it in the oven.

Mummy's Meatloaf

Meatloaf Recipe
1.5 lbs lean ground beef
1 cup rolled oats
1 cup milk
2 eggs
a grind of pepper and a dash of herbs
1/4 cup BBQ sauce 
Mix all ingredients (except BBQ sauce) in a large bowl. Turn out into an oiled baking dish. Bake at 350°F for 1 hour. Remove from oven and glaze with BBQ sauce. Return to oven for a few minutes under the broiler.
