Automatic BBQd Pitas

Once upon a time Daniel was making chicken kebabs and we had no pita bread. I said "Hey, I bet there's a bread machine recipe for that".

And there was: Peppy's Pita Bread at allrecipes.com.

An hour and a half later, the bread machine was finished mixing the dough, and I turned it out onto the counter to cut and roll it into 8 pitas.

The dough was very tender and manageable; a bit of flour on the rolling pin and rolling surface made it quite easy to roll out into pitas.

Since our oven doesn't heat to 500F (does anyone's?) - and because it's way more fun - we decided to bake the pitas on the BBQ in the following way, guessing on the method:
  1. Preheat the barbecue to high 
  2. Place each pita directly on the grill
  3. Close the lid of the barbecue
  4. Cook for about 2 minutes or so on one side
  5. Using tongs, turn over when they have puffed and have nice grill marks on them
  6. Continue to cook on the other side until done (complete baking takes about 5 minutes)
  7. Put the finished pitas on a plate and cover with a damp towel to keep them pliable

These were so good - no chemically preservative taste because, unlike the ones we buy, there was no calcium proprianate in them. I don't think I'll ever be able to buy pre-fab packaged pita bread again.
